George Perezvelez

Director of Operations, Mourad, Aziza, ML


George Perezvelez began his 30 plus year career while working in his family owned restaurant. After graduating from college and while serving in the military in Charleston, South Carolina, George attended Johnson and Wales and honed his culinary and service skills under the tutelage of Chef Charlie Farrell, Chef Jean Banche and worked at Michelin star, Relais Gourmand rated restaurant Million under Chef Phillipe Million. 

George worked in the East Coast as part of the leadership team and General Manager for well known restaurateurs including Anthony Athanas, Anne Quatrano, Karen Hilliard- Ehrlichman and Pano Karatassos.

George moved to California in 2005 and led management teams as the General Manager and Director of Operations for several iconic California restaurants including Trader Vic's, Left Bank, Pres A Vi, MoMo's and as part of the concept development team at The Plant Cafe Organic . 

Before joining our Michelin team at Mourad, George worked as a consultant for Michelin level restaurants and was the Director of Operations for two time James Beard award winner and Michelin Chef Traci de Jardins at her iconic restaurant, Jardinière. 

George joined the team at Mourad in 2020 before the advent of the COVID pandemic and returned in 2021 to re-open the flagship.
